Both locals and intrepid tourists who have managed to find the place rave about Pop’s all-day breakfast menu that specializes in classic Belizean fare such as refried beans, eggs, bacon, and generous servings of fresh-squeezed orange juice and coffee. But it’s Pop’s signature method of cooking fry jacks, a local breakfast favorite, that keeps the crowds coming. Fry jacks, when done right, are something like a soft and fluffy wheat tortilla. Similar in texture to a pastry, yet normally not sweetened, the fry jack is ubiquitous for breakfast throughout Belize, paired with foods like sausage, eggs, and bacon in the way other cultures use toast. Fry jacks are, by no means, health food – they’re essentially triangles of flour that have been quickly deep fried – but when they’re done right, they’re airy, puffy, and a true delight to eat.
