We meet at the Cayo Welcome Center where you get an introduction to Belize and San Ignacio and a glimpse of what life was like before the Welcome Center was built. We then take a walk ... moredown Burns Avenue also known as the Tourist street, walking up to Constitution Park where we talk about the colonial history of the community in comparison to what we presently see.

We point out major historical buildings and landmarks like the San Ignacio Police Station and the Hawkesworth Bridge which we will also take a walkover as we go to the twin town of Santa Elena. We will make a stop at one of our major tortilla factories where guests get to learn how modern-day corn tortillas are made and the processes and machines being used.

We cross back into San Ignacio town using the low wooden bridge where you get some history of the Macal River that flows beneath it. Our final stop will be the San Ignacio Farmers Market where you get to sample exotic Belizean fruits, learn the medicinal values of the foods and herbs available, and make your own corn tortilla the traditional Mayan way. We then take you back to the Cayo Welcome Center as we end the tour.

We'll pick you up at the Cayo Welcome Center and we walk over to the Wildfire Artzmosphere where you will be greeted with a glass of local Belizean wine. After which you will get to ... moreindulge in 4 Belizean dishes filled with spices in every bite as we explore and enjoy foods from 4 of our major cultures within Belize. We start with a Creole delicacy and one of my childhood favorites, "Boil Up". Boil Up just as the name implies, is a number of boiled local root vegetables, eggs, pigtails, and fish covered in a special coconut-flavored tomato and onion sauce.
From there, we delve into the savory sensations of the Mestizo culture. You will get to indulge in the diverse corn-based foods and enjoy Belizean favorites; salutes, garnaches, and empanadas. Of course, we will be having Mayan food as well, and since we already had so much corn we're going to have some "Relleno de negro" which is a Mayan specialty also known to locals as "black dina" with coconut white rice. Last but definitely not least, we discover the authentic flavors of the Garifuna culture where we get to eat some Darasa with coconut curried vegetables and stewed beef. Darasa can be considered the Garifuna version of the Belizean tamales. We end by making our own Belizean sweet treat called "Wangla". This Experience is guaranteed to leave you "Belizeanized!"

Enjoy a fun-filled day on our Garifuna Cassava Farm Tour. Come witness the traditional life of our Garifuna farmers; maintaining endless rows of cassava beds and reaping the splendid ... morecrop from their labor. This wonder crop has been loyal to the Garifuna people since their movement through the Caribbean by being the main staple in their diet and can last up to several years without spoiling. Therefore, come and enjoy seeing firsthand how to prepare cassava bread from the plant to the finishing product, and also come to enjoy the delicious byproducts such as the scrumptious cassava pudding.

The tour departs from Hopkins at 7:30 AM with an estimated pickup from your hotel at 7:15 AM

It includes round-trip pick up and drop off at your hotel.

The estimated arrival time at the Cassava Farm will be 8:00 AM

Accompanied by a licensed tour guide, you will be introduced to the owners of the Cassava Farm

The owners will also be your instructors for the day as they take you through the amazing cassava mazes they have worked so hard to maintain.

After that tour, you will begin the labor-intensive, yet very rewarding, cassava-preparing process

That is followed by sitting and chatting with the Garifuna folk as you enjoy a wonderfully prepared and scrumptiously delicious traditional Garifuna cuisine

Ending with a tasting of all the byproducts produced by the cassava during that tour. Your sweet tooth will surely be satisfied as you get a taste of the mouthwatering cassava pudding prepared from scratch with all-natural ingredients.

This full day is one where you get to see a wide diversity of things on the island. It is pretty much seeing and going around the Island. Going through the lagoon, seeing the green ... moreiguanas on the mangroves, passing through the white sandy flats where fly fishing takes place. Getting to San Juan ranger station, where the fishes are and the museum with a rich Mayan history and also Mayan artifacts that have been recovered from Chaac Balam Mayan Site. Passing through the Mayan Dugout Channel (channel the dug to facilitate their trading routes), spotting manatees inside the channel surrounded by mangroves eventually leading out to the front of the island where the barrier reef is. Crystal clear water, pretty secluded, where nice snorkeling takes place at Barracuda Patch, and also along the reef. Did I mention this place is like a paradise for anglers? It is. Some really nice fishing takes place close to Rocky Point inside the reef and even better outside the reef. Those big fish get you tired of reeling them in. Conchs and lobsters during their harvest season we get them to enjoy even more our meal. Once we have enough to cook and make our conch ceviche, we move to the island and do our magic while you enjoy the sun, sand, and ice-cold beers.
Once all is done, once calm weather, we make our way back through the front of the island now. So you get to see and go around the complete island of Ambergris Caye. This is one adventure you will love and an experience you will remember for life...
